Alejandro “Jimi“ Martinez grew up in Lima and discovered his passion for cooking very early: His mother started to teach him her culinary secrets when he was eight. Ten years later he commenced his professional training and worked his way up to head chef in restaurants and hotels in Peru before moving to Bratislava. There, at Casa Inka, his delicious creations prompted Marco Vera Bustamente to ask him to come to Vienna and join his team at lima56.


He is truly passionate about food and proud to be able to present traditional Peruvian cuisine to Vienna.
